Ingredients
1 tbsp. olive oil (olijfolie)
2 red onions (rode uien)
3 garlic cloves, diced (knoflookteentjes)
1 large sweet potato (zoete aardappel)
2 large carrots (winterpenen)
1 red pepper (rode paprika)
2 vegetable stock cubes (groentebouillontabletten)
750 ml water
Pepper for seasoning
Directions
Prepare by cleaning, pealing and cutting the red onions, carrots, sweet potato and red pepper into blocks.
Heat 1 tbsp. of oil in a large soup pan and fry the red onion and garlic on low heat for 3 minutes.
Add the diced sweet potato, carrot and red pepper to the soup pan and cook on medium heat for 5 minutes, stirring occasionally.
Add the water and stock cubes to the soup pan, bring to a boil, cover and let it simmer for 20 minutes.
Remove from the heat and puree with a hand blender or food processor. Season to taste and serve.
